Stuffed Acorn Squash

2-4 servings
2 acorn squash
½ pound ground beef
1 small onion, diced
8 ounces mushrooms, chopped
2 cloves garlic, minced
¼ teaspoon chipotle powder
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon dried oregano
Salt & pepper
Preheat oven to 400F.
Cut each squash in half and scoop out the seeds. Place the squash halves, cut-side down, on a baking sheet and roast until tender (approx. 30 minutes – time will vary depending on the size of the squash). Remove from oven and set aside.
In a skillet, heat a couple tablespoons of oil over medium heat. Add the diced onion and sauté until translucent. Next add in the ground beef and cook until browned. To the onion & beef mixture, add the garlic, chipotle powder, cumin, coriander and oregano and stir to combine. Finally, add the mushrooms and sauté until they have given off their liquid and the beef is cooked through. Taste mixture and adjust seasoning with salt and pepper. Remove the mixture from the heat.
Fill each of the squash halves with some of the beef mixture and place in a baking pan. Add enough water to the pan to just cover the bottom – this will help prevent the squash from burning and sticking to the bottom of your pan. Place pan in the oven and cook for 15 minutes – until filling is completely heated through. Remove from oven and enjoy!

Get out of my head (and kitchen), Erin! This (with chorizo) is on the menu for this very evening. Squash is a way of life in the Fuller-diLeonardo house, though I have never tried adding the mushrooms directly into the meat saute. Good idea.

Thank you so much for the birthday wishes! I miss the nooners like crazy! I miss it so much that I will be there tomorrow at noon because I’ll admit that I have been going to the 9am and 4pms due to scheduling, but I know where I belong.
But there are definitely some really great athletes in both the 9am and 4pm and I mean no disrespect to you guys by saying the noon is where my heart is. As for the 6am crew, we’ll save that for some time in January…

Did Wednesday’s AMRAP today, and had my mind set on 10 rds. Gamed it, started with a good pace, but damn those TTBs dropped off quicker than I expected. Disappointed.

Had Ben there to keep me on my toes (to bars) and he was on the high bar while I felt like I was cheating on the low bar. By the time we got to singles I was able to put my feet down, reset, and go again, while Ben was stuck hanging between, definitely wouldn’t have gotten 9 rds up there. I’m going high bar from now on, no slacking!
