Chorizo-Stuffed, Bacon-Wrapped Dates

Makes about 22 pieces

I thought this would be a good recipe for those looking for paleo-friendly appetizers this New Year’s Eve. Enjoy!

1 pound package medjool dates

4 ounces Spanish chorizo

11 slices bacon, cut in half
Preheat oven to 400F.
Remove casing from the chorizo and cut into bite-sized pieces. Slice open the dates and remove the pits. Stuff each date with a piece of chorizo. Wrap each stuffed date with ½ slice of bacon. Place bacon-wrapped dates on a baking sheet and bake until bacon is cooked through (approx. 20 minutes). You may want to turn dates halfway through baking to ensure even cooking of the bacon.

    I’m going to have to scale the OHS to #115, but I’m budgeting about an hour or more for this workout. Would love to do this alongside someone else.

    Erin O: those are like Paleo candy!!! YUM! When are you gonna make me some?? I may attempt this one as they look and sound so good!

    Eileen – Definitely try them! They are super simple to put together. You can even assemble them a few hours ahead (keep refrigerated) and pop them in the oven right before guests arrive if you’re making them for a party.
